Being an antipodean, I first learned about s’mores watching American television. To confess, it was an episode of The Bachelor. I thought the name “s’mores” was excruciatingly awful and could only guess at the spelling as I googled to understand the composition of this campfire treat.
But when I discovered that a s’more is molten chocolate and marshmallow in a graham cracker sandwich, I was somewhat mollified about the name.
Of course, then I had to google “graham cracker”, because these are also not readily available Downunder.
Turns out graham crackers are made with a special kind of flour… Graham Flour… Also not available… But this flour appears to be akin to wholemeal flour.

So I was thinking, what about making a melee of ingredients – marshmallows, chocolate, cookie dough- to deliver the s’mores effect in cookie bar form? Other recipes use things like actual graham crackers as a base, which is not really feasible… And so I wondered if the whole concept could be chunkified by using jumbo rolled oats as the “wholemeal” factor.

Coffee and s’mores cookie bars… Perfect for a rainy day!

 

S’mores Cookie Bars

Ingredients

125g butter
1/2 cup white sugar
1/2 cup brown sugar
1 tbsp honey
1 egg
Pinch salt
1 tsp vanilla

1/2 cup jumbo rolled oats
1 1/2 cups flour
2 tsp baking powder
1/2 tsp cinnamon
100g chopped milk or dark chocolate
3/4 cup mini marshmallows
1/4 cup mini marshmallows, extra
25g chopped milk or dark chocolate, extra

Mixing

Beat butter, sugar and honey until creamy. Add egg, vanilla and salt, beat until combined. Stir in oats and chocolate. Add sifted flour, cinnamon and baking powder, mix to combine. The mixture will be soft and slightly dough like. Add marshmallows and gently stir them into the mixture.

Press gently into a 20x25cm bar tin which has been lined with baking paper.

Bake at 180 degrees C for 25 minutes, sprinkle over extra marshmallows, and extra chocolate, and bake a further 5 minutes. Cool the s’mores cookie bars in the tin.

When your s’mores cookie bars are cool, cut with a sharp knife into 15 bars about 5×6.5cm in size.
