Chocolate Lava Cakes

It’s the day after the shortest day of the year, and my hopeful plan to be “good” has lasted about 36 hours! Layer Cake June has resulted in layers on me, I fear.

Having been a Salad Muncher and mostly starving all day, I was going to just make a quick and dirty microwave steamed pudding, and then I realised that if one is going to indulge oneself with unjustifiable calories, then the calories should be worth it! Enter these Little Chocolate Lava Cakes, which take you from desperate to happy in less than 20 minutes.

Chocolate Lava Cakes

These little chocolate lava cakes  are super-quick to mix, and are simply delicious. Best of all, if you overcook this mixture, while they won’t be Lava Cakes, they will still be still be amazing! Just drown them in liquid cream or let a scoop of ice cream melt over the top. Speaking of microwaving, these will cook in about a minute on high… but they won’t have molten centres.

I’m going to say they fit in Layer Cake June because they have a cooked layer on the outside and a molten layer in the middle. I’m also going to say that they are healthy because (ahem) they don’t have much flour in them (ahem).

Little Chocolate Lava Cakes

makes 6

ingredients

105g butter
105g good quality dark chocolate
6 tbsp sugar
1/2 tsp vanilla
1/4 tsp salt
4 eggs, beaten
4 tbsp flour, sifted

mixing

Butter six holes of a regular sized muffin pan, and dust with flour.
Melt the butter and chocolate together and stir until smooth. Stir in the sugar, vanilla and salt. Add the eggs, and stir until the mixture is completely smooth. Add in the sifted flour, and stir in quickly until only just combined.
Spoon the mixture into the prepared pan, to about 5mm below the tops of the holes. Bake at  160°C for 7-8 minutes. The puddings will look cooked and risen around the outside but wet and sunken in the middle as shown in the photo below. It’s best to err on the wetter side (slightly wetter than the picture) if you want good liquid centres. Let sit in the pan for 2 minutes then upturn them onto plates and serve immediately, dusted with icing sugar or cocoa if desired.
