Raspberry Coulis

ingredients

200g raspberries, fresh or frozen
75g sugar
75mL red wine or red berry juice 
small piece lemon rind

mixing

Purée raspberries and pass through a sieve. Bring sugar and wine or juice to the boil with the lemon rind. Add purée and simmer for 3-4 minutes until the coulis is reduced a little.

Cool, store in refrigerator up to a week.
